How to set your table for alfresco Swedish Midsummer dining

In Sweden, a country that's cold and dark for much of the year, celebrating the sun is of the utmost importance. This is why the national holiday ''Midsommar'' is a much awaited affair.

Midsummer day is reserved for eating, drinking, singing and dancing around a flower clad maypole with friends and family - and because you're celebrating summer, of course it all has to be done outside. Only a real downpour will get a Swede to move the party indoors.

The cornerstones of a good Midsummer dining experience include pickled herring, Aquavit snaps, boiled potatoes, eggs, rye crispbread and a dessert evolving strawberries and whipped cream. The table and maypole are decorated with birch branches and wildflowers to celebrate the summer solstice in style.

Picking wild flowers and creating a flower crown is an important part of the celebration. Legend has it that if you pick seven different kinds of flowers and put them under your pillow on Midsummer's eve you'll dream of your one true love.
